Microwave Cauliflower Cheese
This easy-to-follow recipe showcases a delicious Cauliflower Cheese dish that can be prepared within 10 minutes, either with fresh or frozen cauliflower. With its creamy and cheesy flavor, it’s bound to be a hit! SSP prepared.
Ingredients:
- 1 large cauliflower (or 2 cups frozen cauliflower)
- 2½ tbsp cornflour
- 300ml whole milk
- 1½ tsp English mustard (or ½ tsp yellow mustard)
- A small bunch of thyme, leaves picked
- 150g mature cheddar, grated (or ½ cup cheddar cheese, shredded)
- 25g butter
- 2 tablespoons mayonnaise (optional for creaminess)
- ¼ teaspoon garlic salt
- 1 pinch of black pepper
- Extra cheese (for optional topping)
Method:
1. Prepare Cauliflower
Fresh Cauliflower: Cut the cauliflower into bite-sized pieces, reserving the leaves except for any tough ones. Place the stalk pieces in a microwave-safe bowl, then add the florets. Add 1 tbsp water, cover, and microwave for 8 minutes until tender. Drain if necessary. Transfer to another microwave-safe dish.
Frozen Cauliflower: Place frozen cauliflower in a microwave-safe bowl. Cover with a damp paper towel and microwave for 3 minutes, then drain.
2. Prepare Sauce: In the original cooking bowl, mix cornflour with a splash of milk to form a smooth paste. Whisk in the remaining milk and season with garlic salt. Stir in mustard, thyme, and cheddar cheese (or mayonnaise for added creaminess if using frozen cauliflower). Pour the mixture over the cooked cauliflower.
3. Cooking: Dot the butter and optional cauliflower leaves over the cauliflower. Cover with a damp paper towel and microwave on high for 5 minutes (or for frozen cauliflower, microwave for an additional 3 minutes).
4. Final Touches: Stir gently until the cheese has fully melted and the sauce is creamy. Add a pinch of black pepper.
