Ingredients
- 4 cups Salad Greens
- 1 cup Cooked Rice Noodles
- 1/2 cup Green Onions, thinly sliced
- 1/4 cup Red Onion, thinly sliced
- 1/2 cup Peanuts
- 2/3 cup Edamame (Optional)
- 2 cups Pineapples, diced
- 1 tsp Maple Syrup
- 1 Steak, charred and sliced
For the Dressing:
- 1/4 cup Ginger, minced
- 1 Garlic Clove, minced
- 1 tbsp Maple Syrup
- 1/2 tsp Chili Flakes
- Juice of 4 Limes
- 1 tbsp Sesame Oil
- 2 tbsp Soy Sauce
- 1/2 cup Olive Oil
- Pinch of Black Pepper
Instructions
- In a large salad bowl, combine 4 cups salad greens, 1 cup cooked rice noodles, ½ cup sliced green onions, ¼ cup sliced red onions, ½ cup whole peanuts, and ⅔ cup edamame. Set aside.
- Cook your preferred cut of steak to your desired doneness. I recommend a rare filet mignon. Once cooked, remove the steak from the pan and let it rest, keeping the pan's contents intact.
- In the same pan over medium-high heat, add about 2 cups of roughly chopped pineapple. Char the pineapple for about 3-4 minutes. Add 1 tsp of maple syrup, mixing well until the pineapple becomes soft, charred, and sticky. Remove from heat and let cool.
- For the dressing, combine ¼ cup minced ginger, 1 minced garlic clove, 1 tbsp maple syrup, ½ tsp chili flakes, juice from 4 limes, 1 tbsp sesame oil, 2 tbsp soy sauce, and ½ cup olive oil in a mason jar. Add a pinch of black pepper. Shake until emulsified.
- Add the cooled pineapple to the salad. Drizzle over your dressing and toss gently to combine. Slice the steak thinly and use it as a garnish. Enjoy your flavorful salad!
