Simple beef nachos in 15 minutes

Ingredients:
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 500g Coles Finest Carbon Neutral Beef Mince
- 300g can kidney beans, drained and rinsed
- 1 tsp Mexican chilli powder
- 35g sachet reduced-salt taco seasoning mix
- 2 tbsp tomato paste- 1/4 cup water
- 1/2 cup chopped coriander leaves
- 230g packet corn chips
- 1 cup grated cheddar cheese
- 1/2 cup tomato salsa
- Diced avocado, for serving
- Bulla Light Sour Cream
- Fresh coriander, for serving
Instructions:
Step 1: Preheat the oven to 200C. Heat the olive oil in a non-stick frying pan over medium heat. Add the chopped onion and cook for about 2 minutes, or until softened. Add the beef mince and cook, stirring with a wooden spoon, for approximately 5 minutes or until browned.
Step 2: Add the kidney beans, Mexican chilli powder, reduced-salt taco seasoning mix, tomato paste, and water to the pan. Reduce the heat to medium-low and simmer for about 5 minutes or until the mixture thickens. Stir in the chopped coriander.
Step 3: Arrange the corn chips on a heatproof plate. Top them with the beef mixture and sprinkle grated cheddar cheese over the top. Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbly.
Step 4: Remove the plate from the oven and garnish the nachos with tomato salsa, diced avocado, a dollop of Bulla Light Sour Cream, and fresh coriander.
