Here's what you'll need for this tantalizing shrub:
– 1/2 cup sugar
– Strips of zest from 3 tangerines (preferably organic)
–2 cups whole cranberries (thawed if frozen) or freshly picked
– 1/2 cup apple cider vinegar
– Sparkling water, to serve
Let's get started:
1. Muddle the zest and sugar: In a quart glass jar, toss together the sugar and zest. Lightly muddle the zest into the sugar using a bar muddler or the back of a wooden spoon. Allow it to rest on the counter for 2 hours.
2. Juice the tangerines: While the zest is infusing, juice the three tangerines, aiming for approximately 1/2 cup of juice. Set the juice aside for later use.
3. Blend the cranberries and vinegar: In a blender, combine the cranberries and apple cider vinegar. Blend until you achieve a smooth puree, typically lasting around 20 to 30 seconds. Set it aside for now.
4. Remove the zest from the sugar: After 2 hours, remove the zest from the sugar mixture and discard it.
5. Mix the infused sugar with the cranberry-vinegar blend: Pour the tangerine juice and pureed cranberries into the jar containing the sugar. Give it a good mix to fully combine. At this point, the mixture may seem thick, which is normal.
6. Let it steep for 2 days: Cover the jar with a lightweight cover, such as a tea towel, and leave it to steep on the counter for 2 days.
7. Strain and bottle the shrub: After the steeping period, strain out the solids by using a fine mesh strainer or cheesecloth placed over a medium bowl. Keep in mind, that it's best to allow at least 10 minutes for the liquid to strain naturally without any forceful pressing. Once strained, discard the solids and transfer the liquid into a glass container. Refrigerate the shrub, and it will happily keep for up to 2 months.
8. Mix into drinks: To prepare the drink, combine 1 ounce of shrub with 2-3 ounces of sparkling water in a highball glass filled with ice. For an extra touch, feel free to garnish with cranberries.
