Asparagus Stir-Fry Recipe

Ingredients
- 350 g firm tofu
- 2 teaspoons of groundnut oil
- 2 tablespoons of sesame seeds
- ½ tablespoon of cornflour
- 2 tablespoons of soy sauce
- 1 tablespoon of white wine vinegar
- 1 clove of garlic
- 1 fresh red chili, plus extra to serve
- 5 cm piece of ginger
- 320 g asparagus
- 150 g beansprouts
- 200 g rice noodles (optional, for serving)
Method
1. Prepare the Tofu:
Start by draining the moisture from 350g of firm tofu. Place the tofu on a plate lined with kitchen paper, and use another layer of kitchen paper to gently press and absorb any excess moisture. Set aside.
2. Crispy Tofu:
Heat a large frying pan over medium heat. Cut the tofu into quarters and then into smaller pieces. Add 1 teaspoon of groundnut oil to the pan, followed by the tofu. Cook for 10 to 15 minutes, turning halfway, until the tofu turns golden and develops a crisp texture. Transfer the tofu to a bowl.
3. Sesame Seed Coating:
In the same pan, toast 2 tablespoons of sesame seeds until lightly golden. Toss the toasted sesame seeds with the tofu, ensuring an even coating.
4. Flavorful Sauce:
Combine ½ tablespoon of cornflour, 2 tablespoons of soy sauce, and 1 tablespoon of white wine vinegar in a small bowl. Mix well until the cornflour dissolves.
5. Aromatic Stir-Fry:
Finely chop 1 clove of garlic and trim and slice 1 fresh red chili. Peel a 5cm piece of ginger and cut it into thin matchstick-like pieces. Snap the woody ends off 320g of asparagus, then slice them on a diagonal.
6. Stir-Fry Preparation:
Heat a wok over high heat and add 1 teaspoon of groundnut oil. Once hot, add the garlic, chili, and ginger, followed by the asparagus and 150g of beansprouts. Stir continuously and cook for a couple of minutes until fragrant and golden.
7. Thickened Sauce:
Pour in the cornflour mixture to the stir-fry. Reduce the heat to medium and cook for another 4 to 5 minutes until the sauce thickens, adding a splash of water if necessary.
8. Serving:
Serve the delicious stir-fried veggies alongside the sesame-coated tofu. For an extra kick, garnish with sliced red chili. You can enjoy this dish as is or add cooked rice noodles for a more filling meal.
