Australian corn fritters: a quick recipe
Ingredients:
- 1 cup of self-raising flour
-2 eggs
- 1/3 cup of milk
- 2 cans (420g each) of corn kernels, drained
- 2 tbsp of chopped chives
- 100g of crumbled fetta
- 30g of cold butter, cut into a piece
- 1 small avocado, sliced into wedges
- 30g of baby rocket
- 2 tbsp of Coles sweet chilli sauce (for serving)
Preparation:
Step 1:
Begin by placing the self-raising flour into a large mixing bowl. Create a well in the center of the flour. In a separate jug, whisk the eggs and milk together using a fork. Gradually pour this egg and milk mixture into the well of the flour. Gently stir until the ingredients are combined. Be careful not to over-mix, as this may result in tough fritters. Next, fold in the corn kernels, chopped chives, and crumbled fetta to enhance the flavors.
Step 2:
For a delightful cooking experience, heat a large frying pan over moderate heat. Take the piece of cold butter and wrap it in a paper towel. Once the pan is heated, use the butter-wrapped paper towel to grease the pan. This will prevent the fritters from sticking. Drop 1/4 cupfuls of the fritter mixture onto the pan, ensuring they are evenly spaced apart. Cook each fritter for approximately 2-3 minutes, or until the underside turns a delightful golden brown. Flip the fritters and cook the other side to perfection. Repeat this process with the remaining fritter mixture, using the butter-wrapped paper towel to grease the pan each time.
