Dorado is a sea fish with tender white meat and a small amount of bones. It's quite simple to season it with spices, stuff it with lemon and basil, and bake it in the oven. The fish bakes well and turns out tender, aromatic, and juicy. SSPDaily tells about it.
- Clean the fish by removing the scales, cutting off the fins, and gutting it. Rinse and pat dry with a paper towel.
- Make 3-4 cuts on one side and rub with pepper and salt.
- Mix olive oil with rosemary and coat the fish on both sides. Let it marinate for 20 minutes.
- Cut the lemon into slices.
- Place a lemon slice in each cut, and a few slices along with basil inside the belly.
- Place the fish on a baking sheet lined with parchment paper. Bake in a preheated oven at 190 degrees Celsius for 20-25 minutes. Serve on a platter and garnish with vegetables or herbs.
