Corn Dog Muffins: A Delightful Lunch Snack

An inventive twist on the beloved fair and carnival classic, these corn dog muffins are hassle-free and not fried. Best part? Ingredients:
- 1/2 cup (207g) finely ground yellow cornmeal
- 1/2 cup (168g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 2 tablespoons (78g) granulated sugar
- 1/4 cup (130g) melted butter (To add extra flavor, try browning the butter)
- 1 egg
- 1/2 cup buttermilk
- 5 to 6 hot dogs
For serving:
- Mustard
- Ketchup
- Relish
Method:
1. Preheat the oven to 375°F.
2. Prepare a mini muffin tray by lining it with baking spray.
3. Mix the dry ingredients: In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, and sugar. Stir the ingredients together with a spatula until well combined.
4. Mix the wet ingredients: In another bowl, whisk together the melted butter, eggs, and buttermilk until smooth.
5. Combine the wet and dry ingredients: Pour the buttermilk mixture into the bowl with the dry ingredients, and stir well to ensure there are no lumps or dry pockets of flour.
6. Prepare the hot dogs: Cut each hot dog into 1-inch pieces, resulting in 20 pieces.
7. Fill the muffin tray and add the hot dogs: Using a tablespoon measure, distribute the cornbread batter into the greased muffin tray. Push one piece of hot dog into the batter of each well, ensuring that the hot dog reaches the bottom.
8. Bake: Place the muffin tray in the preheated oven and bake for 8-10 minutes. The muffins should rise, and turn a golden color, and a toothpick inserted into the cornbread portion should come out clean.
9. Serve: Using a small offset spatula, carefully remove the muffins from the pan. Serve the muffins warm, accompanied by mustard, ketchup, or relish. Thanks to their portable nature, they also make for a delightful lunch treat.
