Easy rice paper rolls: recipe for a healthy Vietnamese delight

Originating from Vietnam, Vietnamese rice paper rolls have gained immense popularity worldwide. Unlike their fried counterparts, spring rolls, these rolls are a nutritious and refreshing option. The beauty of this dish lies in its versatility, allowing you to customize the ingredients to suit your dietary preferences, occasions, and taste buds. This is prepared by SSP.

Typically, the rolls consist of a filling comprising vermicelli rice noodles, crisp vegetables, and flavorful herbs. You can enhance the flavors by adding proteins like chicken, pork, prawns, beef, or for a vegetarian option, tofu. Accompanying these rolls, you can opt for a traditional Nuoc cham (North Vietnamese dipping sauce), a peanut dipping sauce, or simply serve them with sweet chili sauce.

Ingredients:

- 1 cup shredded barbecued chicken

- 1/8 Chinese cabbage (wombok), finely shredded (see note)

- 1/2 cup beansprouts, trimmed

- 1 small red capsicum, thinly sliced

- 1/3 cup fresh mint leaves

- 1/3 cup fresh coriander leaves

- 1 lime, juiced

- 1 tbsp fish sauce

- 12 x 22cm rice paper rounds

- Sweet chili sauce, to serve

- Extra coriander, to serve

Step 1

In a large bowl, combine the shredded barbecued chicken, finely shredded Chinese cabbage, beansprouts, thinly sliced red capsicum, fresh mint leaves, fresh coriander leaves, 2 tablespoons of lime juice, and fish sauce.

Step 2

To soften the rice paper rounds, place one round in a medium bowl of lukewarm water for approximately 15 seconds. Remove and place it on a clean tea towel or paper towel.

Step 3

Place a quarter cup of the prepared chicken mixture along the center of the rice paper round. Fold the ends in and roll it up firmly to enclose the filling. Repeat this step with the remaining rice paper rounds and filling.

Step 4

Serve these delicious Vietnamese rice paper rolls with sweet chili sauce and garnish them with extra coriander for added freshness.

Recipe notes:

Remember that you will need half a cup of shredded cabbage which can be added to the filling for added crunch and flavor.
