Grilled Salmon with Savory Marinades

Ingredients:
- 1 ½ pounds salmon fillets (or 1 large fillet about 2 lb, cut into 8 pieces)
- Lemon pepper to taste
- Garlic powder to taste
- Salt to taste
- ⅓ cup soy sauce
- ⅓ cup brown sugar
- ⅓ cup water
- 1 tablespoon packed brown sugar
- 1 tablespoon butter, melted
- 1 tablespoon olive or vegetable oil (¼ cup if the first recipe's marinade is preferred)
- 1 tablespoon honey- 1 clove garlic, finely chopped
Directions:
1. Prepare Ingredients.
2. Season salmon fillets with lemon pepper, garlic powder, and salt. Place salmon in a large resealable plastic bag or a shallow dish.
3. Make Marinade:
- Option 1: In a small bowl, mix ⅓ cup soy sauce, ⅓ cup brown sugar, ⅓ cup water, and ¼ cup vegetable oil until sugar dissolves.
- Option 2: In another bowl, mix 1 tablespoon brown sugar, melted butter, 1 tablespoon oil, 1 tablespoon honey, 1 tablespoon soy sauce, and finely chopped garlic.
4. Marinate Salmon:
- Soy Sauce Variation: Add the soy sauce mixture to the bag with salmon. Seal, turn to coat, and refrigerate for at least 2 hours.
- Honey-Soy Variation: Pour the honey-soy mixture over the salmon in the dish. Cover and refrigerate for at least 30 minutes but no longer than 1 hour.
5. Prepare Grill: Preheat an outdoor grill for medium heat and lightly oil the grate.
6. Grill Salmon:
- For Soy Sauce Marinade: Remove salmon from the bag and discard the marinade. Grill the salmon for about 6 to 8 minutes per side, or until the fish flakes easily with a fork.
- For Honey-Soy Marinade: Place salmon skin side down on the grill. Brush 2 or 3 times with reserved marinade, and grill for 10 to 20 minutes or until the salmon flakes easily with a fork. Discard any remaining marinade.
Optional: Sprinkle the grilled salmon with toasted white and black sesame seeds or green onions for a beautiful finish.
