How to Freeze Citrus Fruit and Juices
Whether you have an abundance of citrus fruit from your trees or enjoy buying in bulk, freezing citrus fruits is a practical solution to avoid wastage. Here's a guide on freezing citrus fruits and maximizing their usage without compromising their freshness!
To properly freeze citrus fruits, there are a few key tips to keep in mind:
1. Set your freezer temperature to 0 degrees Fahrenheit or -18 degrees Celsius.
2. Aim to keep the freezer about 75% full to allow for adequate air circulation around frozen items. If it's not full enough, utilize ice to fill the empty spaces.
3. Before freezing, use a solution containing citric acid or Vitamin C to prevent oxidation, which can potentially compromise the nutritional value.
4. If uncertain about suitable freezer foods, refer to the frozen aisles of your local grocery store. As a general rule, if it can be frozen at the store, you can freeze it at home too!
1. Sliced Citrus Fruit:
- Place individual slices between sheets of freezer, waxed, or parchment paper.
- Stack them in a plastic, airtight container.
- Frozen slices can be used directly in drinks without thawing.
- For garnish purposes, thaw at room temperature for approximately 30 minutes.
2. Whole Citrus Fruit:
- Wash and pat dry the citrus fruits, such as limes and oranges.
- Freeze them in a freezer bag.
- They can be stored as whole fruits in the freezer for up to six months.
- Note that thawed whole fruits may become mushy but can still be used for juicing or cooking.
3. Citrus Juice:
- If you have excess freshly squeezed citrus juice, don't let it go to waste.
- Fill freezer-safe containers approximately three-fourths full, allowing room for expansion during freezing.
- Alternatively, freeze the juice in plastic drink cups and transfer them to freezer bags.
- Frozen citrus juice can last 8-12 months in the freezer and can be thawed at room temperature before use.
4. Citrus Zest:
- To freeze citrus zest:
- Scatter small amounts on a tray or plate.
- Freeze for several hours.
- Transfer the frozen zest to small freezer bags, ensuring proper sealing.
- Frozen citrus zest can last up to six months in the freezer and can be used without thawing.
