To store Parmesan cheese, it should be kept in the refrigerator. Store it in a glass or plastic container, or wrap it tightly with cling wrap to preserve its freshness. It is important to store Parmesan cheese away from other foods, as it tends to absorb odors from the refrigerator.

It's worth noting that these storage instructions are not limited to Parmigiano Reggiano alone. Similar hard cheeses like parmesan can also be stored following the same guidelines.

The shelf life of Parmigiano Reggiano can vary depending on its maturation process. When vacuum-packed, the cheese can last for several months in the fridge. However, it is always advisable to check the best-by date on the package for specific guidance.

If you have bought a freshly-cut piece of Parmigiano, its shelf life will depend on its maturation. Cheese with a maturation period of 12 to 18 months can typically be kept for around 15 days. Meanwhile, Parmigiano Reggiano which has been aged for 24 months can be stored for approximately one month.

It's important to be able to recognize when Parmigiano Reggiano has gone bad. An acrid or unpleasant odor is a clear sign that the cheese should be discarded. However, if you notice a little mold forming on the cheese, it does not necessarily mean it has gone bad. Generally, this is a result of slight humidity and it is safe to consume the cheese after cutting away the affected area. In the case of pre-grated cheese, if mold is present, it is recommended to discard the entire container.

If your Parmesan cheese has become hard or dried out, unfortunately, there is no way to "rescue" it. However, the rinds of Parmigiano Reggiano can still be put to good use. They can be added to soups and risotto to infuse the dish with flavor, just remember to remove the rind before serving.

By taking proper care of your Parmesan cheese and following these guidelines, it should last according to the "best before date" provided. Ensuring the correct storage and usage will allow you to enjoy the full potential of this delicious cheese.
