• 150ml of milk
• 400ml of double cream
• 60g of caster sugar
• 1 vanilla pod, split lengthways

1. Begin by placing the sheets of gelatine in a bowl of cold water and allowing them to soak for approximately 5 minutes.
2. In a saucepan, combine the milk, cream, sugar, and the scraped seeds from the vanilla pod (use the back of a knife). Stir to blend the ingredients before bringing them to a simmer. Once simmering, remove the saucepan from the heat.
3. Retrieve the gelatine sheets from the cold water, ensuring to squeeze out any excess water, and add them to the milk mixture. Stir well until the gelatine is completely dissolved.
4. Transfer the mixture into four ramekins and refrigerate for a minimum of a couple of hours to allow the panna cotta to set.
5. When ready to serve, gently turn each ramekin upside-down onto a serving plate. If the panna cotta does not immediately release from the ramekins, carefully dip each ramekin into a bowl of warm water to loosen the dessert.
