Crispy and Quick Zucchini Fries
Baked zucchini fries are a delicious and healthy snack, offering a cheesy flavor with freshly grated Parmesan and an Italian spice blend. These fries are gluten-free, low-carb, and keto-friendly. This is prepared by SSP.
Ingredients
Zucchini Fries:
- 2 medium zucchini
- 1 egg or egg whites
- 1 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian spice blend
- Panko (optional for extra crispy texture)
- Flour (optional to help coating stick)
Lemon Parsley Aioli:
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tbsp finely chopped parsley
- Salt and pepper
Instructions
1. Preheat the oven to 425°F and line two baking trays with parchment paper or lightly coat them with cooking spray.
2. Slice each zucchini into spears—first halve the zucchini, then halve again, and finally cut into quarters for about 16 slices each.
3. Pat the zucchini spears dry with a towel.
4. In a shallow dish, mix Parmesan, garlic powder, Italian spice blend, and optionally Panko and flour.
5. In a separate bowl, crack the egg and lightly beat it or whisk egg whites until foamy.
6. Dip a zucchini slice in the egg wash and then coat in the Parmesan mixture. Place the coated zucchini on the baking tray. Repeat for all slices.
7. Bake the zucchini fries for 25-30 minutes, flipping halfway for even cooking, until crispy and golden.
8. For the optional lemon parsley aioli, combine all ingredients in a small bowl and mix well.9. Serve the fries immediately with the aioli.
