Shepherd’s Pie Recipe
A classic British and Irish dish, shepherd's pie is beloved for its comforting flavors. This dish combines lamb, gravy, and indulgent mashed potatoes for the perfect meal. Ingredients
- 1 tbsp olive oil
- 1 brown onion, halved and finely chopped
- 1 carrot, peeled and finely chopped
- 2 celery sticks, trimmed and finely chopped
- 500g lamb mince
- 2 tbsp plain flour
- 1 tbsp Coles tomato paste
- 1 tbsp Worcestershire sauce
- 1 bay leaf
- 500ml (2 cups) Massel beef-style stock
- 4 desiree potatoes (about 200g each), peeled and chopped
- 40g butter
- 125ml (1/2 cup) milk
- Melted butter, for brushing
Method
Step 1
Heat olive oil in a large saucepan over medium-high heat. Add chopped onion, carrot, and celery. Cook for 5 minutes or until soft. Add the lamb mince, cooking and stirring to break up lumps for about 5 minutes, until the lamb is brown.
Step 2
Stir in the flour and cook for 2 minutes until mixed well. Add the tomato paste, Worcestershire sauce, bay leaf, and stock. Bring to a boil, then reduce heat to low. Simmer, stirring occasionally for 30 minutes until the sauce thickens. Taste and season to preference.
Step 3
Meanwhile, cook the potato in salted boiling water for 15 minutes until tender. Drain well and return to the pan with butter. Mash the potatoes until smooth using a potato masher or fork. Stir in milk and season with salt and pepper to taste.
Step 4
Preheat your oven to 200°C. Spoon the lamb mixture into a 2L (8-cup) ovenproof baking dish, or distribute it among four individual dishes. Spread the mashed potatoes over the lamb. Brush the top with melted butter. Bake for 20 minutes in the preheated oven until the potatoes are golden brown. Serve immediately.
