If you desire extra creaminess, try a quick boil method. Boil canned chickpeas in 2 cups of water and 1/2 teaspoon of baking soda for 15 minutes. This process helps break down the chickpeas further, resulting in an even smoother hummus.

While it can be time-consuming, to yield the smoothest hummus, some prefer to peel the chickpeas. However, our recommended quick boil method provides near-identical results, making it a time-savvy alternative.

For the tastiest hummus, opt for freshly squeezed lemon juice over bottled versions. The difference in flavor is remarkable.

When blending, gradually add ice water, about 1 tablespoon at a time. This addition creates a silky smooth and fluffy hummus consistency that is simply divine.

Ingredients:

  • 1 (14-ounce) can of chickpeas, rinsed and drained
  • 1 clove garlic, peeled
  • 4 tablespoons of Buffalo sauce (divided)
  • 4 tablespoons of tahini
  • 1 teaspoon of lemon juice (adjust to taste)
  • 1/2 teaspoon of smoked paprika
  • 1 to 2 tablespoons of ice water (as needed)
  • Salt (to taste)
  • 1/4 cup of crumbled blue cheese
