- 1 tbsp olive oil
- 800g thin beef sausages
- 1 large brown onion, thinly sliced
- 2 carrots, peeled and thinly sliced
- 2 garlic cloves, crushed
- 1 tbsp KEEN'S Traditional Curry Powder
- 2 tbsp fruit chutney
- 2 cups Massel chicken style liquid stock
- 1 cup frozen peas
- Coles White Medium Grain Rice, steamed, to serve
- Parsley leaves, to serve
How to make
Step 1: Cook the Sausages
Heat the olive oil in a large, heavy-based saucepan over medium-high heat. Brown the sausages, turning, for about 6 to 8 minutes. Transfer them to a large plate and cut them into chunks, or keep whole as desired.
Step 2: Make the Base of the Sauce
Add the onion, carrots, and garlic to the pan. Sauté for approximately 5 minutes, or until the onion softens. Add the curry powder, stirring for 30 seconds until fragrant. Then incorporate the fruit chutney and chicken stock, bringing the mixture to a boil.
Step 3: Simmer and Complete the Dish
Return the sausages to the pan, reduce the heat to medium-low, cover, and simmer for 25 minutes until the sausages are cooked through and the sauce thickens into a gravy-like consistency. Stir in the frozen peas and season to taste. Allow cooking for 1 to 2 minutes until heated through. Serve over steamed rice or creamy mashed potatoes, and top with parsley leaves for garnish.
